Customizing Categories in Site & Apps

Hi -

My site is highly focused and specialized (on Fitness Technology), therefore:

a) many of the categories in the site & apps are not applicable - I would like to remove

b) there are categories specific to fittech - I would like to add

Where can we customize the categories for the site & apps?

Categories are Data Lists, they can be customized in Studio > Forms > Data Items > Select Module, then select particular list and start editing it
