how do i change this and other default layout like this on other pages

Studio>> pages >> select page you're on( Look at url bar to find specific page if not sure) >> select that page >> options >> COVER - you can change the cover images on any page using this method.
Tip: Use images that relate to your community - e.g fishing community = boats etc /.. good luck
